Ingredients:

1 lb. fresh rhubarb, chopped (about 4 cups)
2 cups chopped strawberries
1 1/4 cups granulated sugar
1/4 cup cornstarch
1 tsp. finely grated lemon zest
1 tsp. fresh lemon juice
1 tsp. pure vanilla extract
1/2 tsp. kosher salt
2 batches store-bought or homemade pie dough
2 tbsp. cold unsalted butter, cut into small pieces
1 large egg, beaten to blend
3 tbsp. sanding sugar
Vanilla ice cream, for serving
