Banana Pudding Cheesecake Squares

Ingredients:

For the Blondie Crust:
– 1/2 cup butter, melted
– 1/2 cup brown sugar, lightly packed
– 1 large egg
– 1/2 cup all-purpose flour
– 1/4 cup mashed banana
– 1 teaspoon vanilla extract
– Pinch of salt

For the Cheesecake Topping:
– 2/3 cup heavy cream, whipped
– 16 oz cream cheese, softened
– 1 cup granulated sugar
– 3.4 oz banana instant pudding mix
– 1/2 cup milk
– 1 teaspoon vanilla extract
– Optional: powdered sugar for additional sweetness

Instructions:

1. Prepare the Blondie Crust:
– Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking pan with non-stick spray or parchment paper.
– In a large bowl, whisk together the melted butter and brown sugar until combined.
– Whisk in the egg, then add the flour, salt, mashed banana, and vanilla extract. Mix until well combined.
– Pour the blondie batter into the prepared pan and bake for 15-20 minutes, until just set. Allow to cool to room temperature.
