Barbecue Pineapple Chicken


Instructions:
1. Preheat your oven to 400°F and coat a baking dish with cooking spray.
2. Slice the onion thinly, chop the bell peppers into bite-size pieces, and dice the seeded jalapeño. Set these aside.
3. In a bowl, mix the chopped chicken pieces with 2/3 cup of the barbecue sauce. Let it marinate for 15 minutes.
4. Arrange the sliced onion in the prepared baking dish. Place the marinated chicken pieces, bell peppers, and pineapple chunks on top.
5. Brush the remaining barbecue sauce over the mixture, then toss to coat. Sprinkle the diced jalapeño on top and season with salt and pepper.
6. Bake uncovered for 30-35 minutes, or until the chicken’s internal temperature reaches 165°F.
7. Serve the dish, spooning the sauce and juices over the chicken.
