Brown Sugar Grilled Pineapple


1. Place the pineapple spears in a big bowl.
2. Sprinkle them with brown sugar, cayenne, vanilla extract, and salt.
3. Mix everything together until the pineapple is coated evenly.
4. Cover the bowl with plastic wrap and let it sit for 30 minutes at room temperature. If you want, you can also refrigerate it overnight.
5. Preheat your grill pan on high heat and spray it with cooking spray.
6. Grill the pineapple for about 1 to 2 minutes on each side until it gets those beautiful grill marks.
7. While the pineapple is grilling, take the leftover marinade liquid and put it in a microwave-safe bowl. Heat it for about 90 seconds until it becomes bubbly and syrupy. Set it aside.
8. Once the pineapple is done, transfer it to a serving platter.
9. Drizzle the grilled pineapple with the syrupy marinade just before serving.
