Butterscotch Bread Pudding:

1. Preheat your oven to 350°F (175°C). Grease an 8×8 baking dish with some spray oil.
2. Break the leftover biscuits into chunks and spread them out evenly in the greased baking dish.
3. In a big bowl, mix together the butterscotch pudding mix, whole milk, eggs, brown sugar, and vanilla extract until everything’s well combined.
4. Pour this mixture over the biscuits in the baking dish, making sure all the biscuits get soaked. Let it sit for about ten minutes to let the biscuits soak up the liquid.
5. Sprinkle the butterscotch chips evenly over the top of the pudding mixture.
6. Pop the baking dish into the preheated oven and bake for roughly 40 minutes. You’ll know it’s done when the pudding is set and has a nice golden brown color.
7. Once it’s done, take it out of the oven and let it cool down a bit.
8. Serve it warm with a good drizzle of butterscotch sauce on top. If you’re feeling extra fancy, add a scoop of vanilla ice cream.
