Cowboy Meatloaf and Potato Casserole

Instructions:

1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and grease a 9×13 inch baking dish.

2. Mix the Meatloaf: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix until well incorporated.

3. Shape and Arrange: Transfer the meatloaf mixture to the prepared baking dish, forming a loaf in the center. Arrange the thinly sliced potatoes around the loaf, overlapping slightly. Season the potatoes with additional salt and pepper.

4. Bake Covered: Cover the baking dish with foil and bake for 45 minutes.

5. Add Cheese: Remove the foil and sprinkle shredded cheddar cheese over the meatloaf and potatoes. Bake uncovered for another 15 minutes, or until the cheese is bubbly and the meatloaf is thoroughly cooked.

6. Serve: Garnish with chopped fresh parsley, if desired, and serve hot.
