Crème Brûlée Cake Recipe

Instructions:

1. Make the Cake Layers:

  •  Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  •  In a medium bowl, whisk together the flour, baking powder, and salt.
  •  In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
  •  Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour. Mix until just combined.
  •  Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  •  Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

 

2. Make the Custard Filling:

  •  In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat.
  •  In a separate bowl, whisk together the egg yolks, sugar, and vanilla extract until pale and smooth.
  •  Slowly pour the hot cream into the egg yolk mixture, whisking constantly to temper the eggs.
  •  Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens (about 5-7 minutes). Do not let it boil.
  •  Remove from heat, strain through a fine mesh sieve, and let it cool.

 

3. Assemble the Cake:

  •  Once the cake layers are completely cool, spread the custard filling between the two layers.
  •  Place the assembled cake in the refrigerator to chill for at least 1 hour.

 

4. Make the Caramelized Sugar Topping:

  •  Sprinkle a thin, even layer of sugar over the top of the chilled cake.
  •  Using a kitchen torch, carefully caramelize the sugar until it melts and turns golden brown. Let the sugar harden for a few minutes before serving.

 

5. Serve:

  •  Slice and enjoy! The cake will have the signature crunchy caramel topping of a Crème Brûlée with a rich, creamy custard between soft cake layers.

Tip:

You can also garnish the cake with fresh berries or whipped cream for an extra touch of elegance.
