  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1 tablespoon Worcestershire sauce

For the Sandwiches:

  • Hoagie rolls or French rolls
  • Swiss or provolone cheese slices (optional)
  • Butter for toasting

  1. Prepare the Roast:
    • Trim excess fat from the beef roast.
    • Place the sliced onions and minced garlic in the bottom of the slow cooker.
    • Season the beef roast with salt and pepper, then place it on top of the onions and garlic.
  2. Make the Cooking Liquid:
    • In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, Dijon mustard, dried rosemary, and dried thyme.

  5. Strain the Cooking Liquid:
    • Strain the cooking liquid from the slow cooker to remove the onions and garlic. This will be your au jus for dipping.
  6. Assemble the Sandwiches:
    • Preheat your oven broiler.
    • Split the hoagie or French rolls and place them on a baking sheet.
    • Optionally, add a slice of Swiss or provolone cheese on each roll.
    • Toast the rolls under the broiler until the cheese is melted and the edges are golden brown.
  7. Serve:
    • Pile the shredded beef onto the toasted rolls.
    • Serve the sandwiches with a side of the strained cooking liquid (au jus) for dipping.
