Garlic Butter Chicken Bites with Lemon Asparagus


1. Prepare the Chicken Bites:
• Slice chicken breasts into bite-sized chunks.
• Season the chicken chunks with salt, pepper, and onion powder.
• Set the seasoned chicken on a shallow plate.
2. Prepare the Asparagus:
• Wash and trim the ends of the asparagus.
• Blanch the asparagus in boiling water for 2 minutes, then soak them in ice water to stop the cooking. Drain and set aside. (Skip this step if using skinny asparagus.)
3. Cook the Chicken:
• Melt half the butter (1/4 cup) with the olive oil in a large cast-iron skillet over medium heat.
• Stir-fry the chicken bites on all sides until golden brown.
• Lower the temperature and add one teaspoon of minced garlic and Italian seasoning. Cook for one minute until the garlic is fragrant.
• Remove the chicken bites from the skillet and set aside on a plate. (You might need to work in batches to avoid crowding the pan.)
4. Prepare the Sauce:
• In the same skillet over medium-high heat, add the remaining teaspoon of minced garlic.
• Deglaze the skillet with chicken broth (or wine) and bring to a simmer, allowing it to reduce by half.
• Add the remaining 1/4 cup butter, lemon juice, hot sauce, and parsley. Stir to combine.
5. Cook the Asparagus and Combine:
• Add the blanched asparagus to the skillet and toss for 2 minutes.
• Push the asparagus to the side and add the sautéed chicken bites back to the pan. Stir for another minute to reheat everything.
• Garnish with more parsley, crushed chili pepper flakes, and lemon slices.
6. Serve:
• Serve your garlic butter chicken bites and asparagus immediately. Enjoy! ❤️
