Jalapeno Peach Chicken Recipe


Season the chicken breasts with salt and black pepper to taste on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Add the seasoned chicken breasts to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped jalapeno peppers and minced garlic. Cook for 1-2 minutes, or until fragrant.
Stir in the peach preserves, apple cider vinegar, soy sauce, Dijon mustard, ground ginger, and red pepper flakes (if using). Bring the mixture to a simmer.
Return the cooked chicken breasts to the skillet, spooning the peach jalapeno sauce over the top.
Reduce the heat to low and let the chicken simmer in the sauce for 2-3 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
Once done, remove the skillet from heat.
Garnish the Jalapeno Peach Chicken with chopped fresh cilantro or parsley, if desired, before serving.
