Lemon Poppy Seed Sheet Cake


Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream together the sugar and butter until light and fluffy.
Beat in the eggs, one at a time, incorporating well after each addition.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture alternately with milk, starting and ending with the flour mixture.
Stir in the lemon zest, lemon juice, and poppy seeds until evenly distributed.
Pour the batter into a greased and floured 13×9 inch baking sheet.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool before slicing and serving.
