Mango cheesecake delight

Ingredients:
For the crust:
1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the mango cheesecake filling:
3 ripe mangoes, peeled, pitted, and diced
16 oz (2 packages) cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup heavy cream, whipped to stiff peaks
1 envelope (about 2 1/4 teaspoons) unflavored gelatin
1/4 cup cold water
For garnish:
Sliced mangoes
Whipped cream
Mint leaves
