8. Cook bacon until crispy; set aside on paper towels to drain. Chop when cold.
9. In a large bowl, whisk together the flour, baking powder, cayenne pepper, and salt.
10. In another bowl, mix milk, egg and oil.
11. Pour the wet ingredients over the dry ingredients and stir until combined.
12. Add the corn, cheese, chopped bacon and chives.

13. Heat a frying pan over medium heat and lightly grease with oil. Pour 1/4 cup batter onto each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
14. Serve hot with maple syrup.
