Strawberry Cream Cupcakes


Directions:

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, mix together flour, sugar, baking soda, and baking powder.
Add butter, egg whites, vanilla extract, sour cream, and milk to the dry ingredients and mix until smooth.
Fill each cupcake liner 2/3 full with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean. Allow to cool.
For the filling, combine strawberries, sugar, and cornstarch in a saucepan over medium heat. Cook until the strawberries soften and the sauce thickens. Let cool.
Once the cupcakes are cooled, cut a small hole in the center of each cupcake and fill with the strawberry mixture.
For the frosting, beat together cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, continue to beat until creamy.
Frost the cupcakes with the cream cheese frosting, garnish with fresh strawberries and white chocolate shavings.
