Zucchini Patties

  • 2 cups grated zucchini (about 2 medium-sized zucchinis)
  • 1 teaspoon salt
  • 1/2 cup finely grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • Olive oil for frying


  1. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10 minutes. This helps to draw out excess moisture from the zucchini.
  2. After 10 minutes, use your hands to squeeze the zucchini to remove as much water as possible. You can also use a clean kitchen towel for this.
  3. In a large mixing bowl, combine the grated zucchini, Parmesan cheese, breadcrumbs, minced garlic, beaten egg, dried oregano, dried basil, and black pepper. Mix until well combined.
  4. Heat a skillet or frying pan over medium heat and add enough olive oil to coat the bottom.
  5. Form the zucchini mixture into small patties, about 2-3 inches in diameter.
  6. Place the patties in the skillet and cook for 3-4 minutes on each side, or until golden brown and cooked through.
  7. Transfer the cooked zucchini patties to a plate lined with paper towels to absorb any excess oil.
  8. Serve the zucchini patties warm. They can be enjoyed on their own, with a dipping sauce, or in a sandwich.
