Nut and Seed Energy Cookies

These Nut and Seed Energy Cookies are a tasty and healthy snack. They have the natural sweetness of honey and dried apricots and the healthy crunch of different nuts and seeds. These cookies are full of protein, fiber, and healthy fats that will keep you full and energized. They’re great for a quick breakfast, a healthy snack, or a treat without feeling bad about it.

70 grams (2.5 ounces) of ingredients 50 grams of dried apricots or 1.8 ounces 70 grams (2.55 ounces) of walnuts 30 grams (1 ounce) of hazelnuts 40 grams (1.4 ounces) of pumpkin seeds 20 grams of sunflower seeds 20 grams of sesame seeds 60 grams (2 ounces) of flaxseeds 2 ounces (20 grams) of almonds 40ml of pine nuts honey from nature
1 egg white
A little salt

How to Do It:

Get the apricots ready:

To make them soft, soak the dried apricots in cold water for 15 to 20 minutes. Drain them and cut them up small.
Get nuts and seeds ready:
Cut the hazelnuts, almonds, and walnuts into small pieces. For texture, try to get pieces of different sizes, but don’t make them too big so that the cookies can form properly.
Mix the dry ingredients: Put the chopped nuts, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds, and pine nuts in a big bowl.
Add the wet ingredients. To the bowl with the nuts and seeds, add the chopped dried apricots, honey, egg white, and a pinch of salt. Make sure to mix the ingredients well so that they all stick together.

To make the cookies, put parchment paper on a baking sheet and set it aside.

Shape small amounts of the dough into the shape of cookies. Cover the baking sheet with foil and put them on it. Wet your hands a little to make it easier to work with the sticky stuff.
Warm the oven up to 180°C (360°F) before you bake.
In a baking sheet, put the cookies. Bake in the oven for 15 to 20 minutes, or until they are hard and crispy.
Cool and Serve: Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
The cookies can be kept for several days in a container that doesn’t let air in.
