Instant Pot Kielbasa Cabbage Potato Soup

Written by admin

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 small head cabbage, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut milk (for a dairy-free option)
  • Chopped fresh parsley for garnish (optional)

  1. Sauté the Kielbasa and Aromatics: Set the Instant Pot to “Sauté” mode. Add the olive oil and sliced kielbasa sausage. Sauté until the sausage is browned on both sides, about 3-4 minutes. Add the diced onion and minced garlic, and sauté for another 2 minutes until the onion is softened.
  2. Add Potatoes and Spices: Add the diced potatoes to the pot, followed by the dried thyme, paprika, salt, and pepper. Stir to coat the potatoes and sausage with the spices.
  3. Pour in Broth: Pour the chicken or vegetable broth into the pot, stirring to deglaze the bottom of the Instant Pot and loosen any browned bits.
  4. Add Cabbage: Add the shredded cabbage on top of the other ingredients. Do not stir.
  5. Pressure Cook: Close the Instant Pot lid and set the valve to the sealing position. Cook on high pressure for 5 minutes.
  6. Quick Release: Once the cooking time is complete, perform a quick pressure release by carefully switching the valve to the venting position.
  7. Finish with Cream: Once the pressure has released and it’s safe to open the Instant Pot, stir in the heavy cream or coconut milk to give the soup a creamy texture. Taste and adjust seasoning if needed.
  8. Serve: Ladle the soup into bowls and garnish with chopped fresh parsley, if desired. Serve hot and enjoy!

This Instant Pot Kielbasa Cabbage Potato Soup is a delicious and satisfying meal that’s perfect for chilly days. Feel free to customize it by adding other vegetables or herbs according to your preference.
